Beef-Stuffed Potatoes

If you are a meat and potatoes kind of person then this spuds for you! Much like shepherd's pie, this beef-stuffed taters recipe uses a different take with a similar taste. A plate of potatoes never tasted so good!

Ingredients
  

  • 16 ounce(s) ground beef
  • 6 tablespoon(s) butter
  • 3/4 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 6 med. potatoes, baked
  • 1/4 cup(s) milk
  • 1 cup(s) onion, minced
  • 1 tablespoon(s) parsley flakes
  • 1/2 cup(s) celery, finely chopped
  • 1 343/1000 cup(s) cheddar cheese soup
  • 3 slices American cheese, halved

Instructions
 

  • Brown beef in 1 tbsp butter in skillet; add the salt and pepper; set aside.
  • Cut baked potatoes in half lengthwise and scoop out pulp into large bowl.
  • Mash and add remaining butter and the milk.
  • Beat well and add beef and remaining ingredients, except cheese.
  • Fill shells with the mixture and put on baking sheet.
  • Top each with a half slice of cheese and bake in hot oven, 400 degrees, about 15 minutes.
  • Ready in 20 min.
