Baked Veggie Casserole

This mouthwatering vegetable casserole is a perfect vegetarian meal, or can make for a scrumptious side dish. This is a great option to incorporate more veggies into the diets of picky eaters, with its egg base and smooth flavor.

Ingredients
  

  • 1/4 cup(s) vegetable oil
  • 1 onion, chopped
  • 1 teaspoon(s) minced garlic
  • 1 large green bell pepper, chopped
  • 2 medium tomatoes, diced
  • 1 dash(es) salt, to taste
  • 1 dash(es) black pepper, to taste
  • 1 dash(es) cumin, to taste
  • 15 ounce(s) lima beans, drained
  • 4 tablespoon(s) chopped fresh parsley
  • 4 eggs
  • 1 tablespoon(s) butter, cut into pieces

Instructions
 

  • Preheat oven to 400 degrees.
  • Heat oil in a large skillet over medium heat.
  • Stir in onion, and cook 5 minutes, until tender.
  • Stir in garlic, green bell pepper, and tomatoes and then season with salt, pepper and cumin.
  • Reduce heat, and simmer 15 to 20 minutes.
  • Mix beans into the onion mixture.
  • Stirring occasionally, cook 10 minutes.
  • Toss in parsley, and transfer to a medium baking dish.
  • Break eggs over the top, dot with butter, and season with salt and pepper.
  • Bake 15 to 20 minutes in the preheated oven, until the eggs are cooked through.
