Crustless Coconut Pie

This coconut custard pie smells so good that you may not be able to wait for it to chill! Be patient, and you'll be rewarded with a cool, creamy treat.

Ingredients
  

  • 1 cup(s) white sugar
  • 1/8 cup(s) all-purpose flour
  • 1/4 teaspoon(s) salt
  • 6 tablespoon(s) butter, melted
  • 1 teaspoon(s) vanilla extract
  • 3 eggs
  • 12 floz can evaporated milk
  • 16 tablespoon(s) shredded coconut

Instructions
 

  • Preheat oven to 325 degrees.
  • Grease and flour a 9 inch pie plate.
  • In a medium bowl, mix together sugar, flour, and salt.
  • Stir in melted butter or margarine and vanilla extract.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in evaporated milk followed by coconut.
  • Pour mixture into pie plate.
  • Bake in preheated oven for 35 to 40 minutes.
  • Chill before serving.
