Hanukkah Latkes
What's Hanukkah without traditional latkes? Celebrate the festival of lights with our rendition of finger-licking good latkes. They're a holiday staple.
Ingredients
- 32 ounce(s) potatoes
- 1 large carrot
- 1 onion
- 2 large eggs
- 1/4 cup(s) flour
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) baking powder
Instructions
- Grate potatoes, carrot and onion.
- Boil potatoes and carrot until done.
- Drain and blot dry with paper towels.
- When completely dry, add onion.
- In separate bowl, beat eggs.
- Add potatoes, carrot and onion; beat together.
- Add flour, salt and baking powder.
- Mix all ingredients together well.
- Heat 3 tbsp of oil to fry.
- Drop potato mixture by heaping teaspoonfuls.
- With back of spoon, flatten.
- Do not crowd and cook 3 minutes on high heat, until golden brown.
- Serve with applesauce.
