Quick and Easy Shepherd's Pie

Ingredients
  

  • 1 pound(s) lean ground beef
  • 8 ounce(s) (1/2 package) frozen mixed vegetables, thawed
  • 333/1000 cup(s) ketchup
  • 1/8 cup(s) worcestershire sauce
  • 1/2 container prepared plain mashed potatoes (such as Country Crock)
  • 1 cup(s) low-fat cheddar cheese (optional)
  • 1 Vegetable oil spray

Instructions
 

  • Spray a casserole dish with vegetable oil.
  • Brown ground beef or turkey breast in a skillet; drain.
  • Return beef to skillet and add thawed frozen vegetables.
  • Heat through and add ketchup and Worcestershire sauce.
  • Stir well to combine.
  • As mixture heats, mix together mashed potatoes and cheese, if using.
  • Place mixture in casserole dish.
  • Spread mashed potatoes (and cheese, if using) over the mixture, forming a thin coating.
  • Heat through in a 350-degree preheated oven for 15 minutes.
  • Allow to rest for 5 minutes before serving.
