Quick Cauliflower Side

If you're short on time, this is a quick side that won't be short on taste. This spicy, cheesy dish is a sure way to get the kids to eat their veggies.

Ingredients
  

  • 1 head of cauliflower
  • 1 cup(s) cheddar cheese, shredded
  • 1/2 cup(s) mayonnaise
  • 1 tablespoon(s) prepared horseradish

Instructions
 

  • Place cauliflower stem side down on a large plate.
  • Cover with plastic wrap.
  • Microwave 7 to 11 minutes, until fork tender.
  • Mix cheese, mayo and horseradish in a small bowl.
  • Unwrap cauliflower and spread the mayo/cheese evenly over it, then microwave for 2-3 minutes until the cheese melts.
