Stuffed Chicken Marsala

It's okay to chicken out, especially when you're talking about this stuffed chicken marsala that makes other versions pale in comparison. Once your family finds out that this is on tonight's menu, they'll flock to the table.

Ingredients
  

  • 2 boneless 1/2 (8 oz.) chicken breasts
  • 1 slice provolone
  • 1 thin slice prosciutto
  • 1 dash(es) Salt
  • 1 dash(es) pepper
  • 1 tablespoon(s) butter
  • 3 mushrooms, sliced
  • 8 leaves baby spinach
  • 1/8 cup(s) marsala wine
  • 1/8 cup(s) brown sauce

Instructions
 

  • Put chicken breast half on cutting board and at thicker end of breast, insert knife 3/4 of the way through the center.
  • Open to create a pocket and stuff with provolone and prosciutto.
  • Fold over and sprinkle with salt and pepper.
  • Grill about 2 minutes on each side.
  • Heat saute pan with butter.
  • When hot, add mushrooms and saute.
  • Add spinach, cook 1 minute longer.
  • Add wine, deglaze pan.
  • Add brown sauce.
  • Simmer 1 minute, then add grilled chicken breast.
  • Place in 350-degree, preheated oven for 5 minutes.

  • Remove breast and plate.

  • Pour sauce over chicken breast.
