Ingredients
  

  • 1/2 cup(s) uncooked large bow tie pasta
  • 6 cup(s) spring greens
  • 1 cup(s) grape tomatoes, halved lengthwise
  • 1/2 cup(s) gorgonzola cheese, crumbled
  • 3 tablespoon(s) olive oil
  • 3 tablespoon(s) white wine vinegar
  • 1 Salt and freshly ground black pepper
  • 1/4 cup(s) pine nuts, toasted

Instructions
 

  • Cook pasta as directed on package.
  • Drain, rinse with cold water, and drain again.
  • In a large salad bowl, mix cooked pasta, spring greens, tomatoes, and cheese.
  • Drizzle with olive oil and vinegar, tossing to coat.
  • Season to taste with salt and freshly ground pepper.
  • Divide salad on to four dinner plates.
  • Sprinkle with pine nuts.
  • For a burst of protein, top with grilled chicken or fish.
