Beef and Potato Soup

Beef and Potato Soup

Ingredients

For 1 people

  • 3 1/2 cup(s) new potatoes, small dice (about 1 pound)
  • 32 ounce(s) sautéed filet mignon, small dice
  • 2 red bell peppers, roasted, small dice
  • 1 large leek, small dice
  • 3 1/3 cup(s) corn (1 lb bag)
  • 12 cup(s) chicken stock
  • 1 dash(es) salt, to taste
  • 1 dash(es) black pepper, to taste
  • 1/8 cup(s) olive oil
  • 1 cornstarch

Directions

Parboil potatoes; cool and set aside. Sauté filet tips; drain and set aside. Sauté red peppers and leek in olive oil until tender. Add corn and potatoes, then add chicken stock, cream, salt and pepper. Bring to a boil; add cornstarch to thicken.
