Beef with Curry and Coconut

Curry up and give this South African beef recipe a try. This ethnic-inspired dish calls upon apricot, curry and coconut to round out the flavor. This is a great warm dish with a surplus of distinctive flavors. Go coconut crazy!


Beef with Curry and Coconut

Ingredients

For 4 people

  • 16 ounce(s) ground beef
  • 1 thick slice stale bread, soaked in milk
  • 1 1/2 tablespoon(s) apricot jam
  • 1 tablespoon(s) mild curry powder
  • 1 large onion, sliced fine
  • 1 egg
  • 1 tablespoon(s) coconut

Directions

  1. Fry the onion until golden. Add curry powder, jam, beaten egg, bread and about 1/2 cup of milk. Add to meat and mix thoroughly. Put it in a small bread pan and bake for about an hour at 350 degrees. Towards the end, baste several times with some beaten egg and a little milk. Sprinkle with coconut and brown it a bit.
