Christmas Quiche

This elegant breakfast will become a new addition to your Christmas traditions, but you won't need carols to enjoy this quiche. Made with light, puff pastry and creamy Swiss cheese, this dish can, and should, be enjoyed year-round.

Christmas Quiche

For 4 people

  • 1 sheet frozen puff pastry, thawed
  • 4 slices bacon, cooked and crumbled
  • 2 eggs
  • 1 cup(s) milk
  • 2 cup(s) shredded Swiss cheese
  • 1 salt and black pepper to taste
  • 1 small tomato, thinly sliced

  1. Preheat oven to 450 degrees. Press the puff pastry into the bottom and up the sides of a shallow casserole dish or 8 inch pie plate.
  2. In a small bowl, beat eggs and milk with a fork until blended; season with salt and pepper. Sprinkle a thin layer of Swiss cheese in the bottom of the pastry crust. Sprinkle crumbled bacon over the cheese. Pour the egg mixture into the pastry and sprinkle with the rest of the cheese. Arrange slices of tomato on top.
  3. Bake in the preheated oven for 20 minutes. Reduce the oven temperature to 350 degrees. Continue to bake for an additional 30 minutes, or until crust is browned.
