Saut onion, pepper and mushrooms in butter in a nonstick skillet, just until tender. Add rice and cook, stirring for 5 minutes. Stir in remaining ingredients. Pour mixture into lightly oil sprayed casserole dish. Cover and bake at 350F for 25 to 30 minutes, until rice is tender.
