Breaded Baked Tomatoes

These tasty tomatoes are coated with salty cracker crumbs and Italian spices, giving them a strong flavor and an elegant presentation. You can serve with baked chicken for an easy, elevated meal.

Breaded Baked Tomatoes


For 4 people

  • 4 medium tomatoes
  • 1/2 teaspoon(s) sugar
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) onion powder
  • 1/8 teaspoon(s) dried basil
  • 1/8 teaspoon(s) dried oregano
  • 1 dash(es) ground pepper
  • 12 to 14 saltine crackers, crumbled (.5 cup)


Preheat oven to 350 degrees. Cut off tops of tomatoes; remove a little of the pulp. Place tomatoes in a shallow baking dish. Stir together remaining ingredients, except crumbs. Sprinkle mixture over tops of tomatoes. Top with crumbs. Bake 20 to 30 minutes, until tender.
