Heart Healthy Baked Beans

Forget those canned baked beans. Instead, stir things up with the homemade version that's sure to put all of the others to shame. Until you've tasted this scrumptious side, you haven't bean there, done that.


Heart Healthy Baked Beans

Ingredients

For 6 people

  • 1 cup(s) dried navy beans
  • 4 cup(s) water
  • 1 vegetable oil spray
  • 1 loin pork chop, very lean
  • 1 cup(s) no-salt-added chili sauce or tomato sauce
  • 3/4 cup(s) chopped onions
  • 2 tablespoon(s) light molasses
  • 1 tablespoon(s) firmly packed brown sugar
  • 1 1/2 teaspoon(s) dry mustard powder
  • 1/4 teaspoon(s) garlic powder
  • 1 cup(s) water

Directions

Place beans and water in a large saucepan over high heat. Bring to a boil and cook 2 minutes. Remove from heat and let stand 1 hour then return beans to heat and simmer 1 hour, or until beans are tender. Drain, rinse and set aside. Preheat oven to 350 degrees. Lightly spray a 1 1/2-quart casserole dish with vegetable oil spray. Place beans in prepared casserole and set aside. Brown pork chop in a small non-stick skillet over medium-high heat. Cut into small cubes and add to beans. Add remaining ingredients and mix well. Cover and bake 4 hours. If needed, add additional water during cooking.
