Low Fat Broccoli Soup
A very creamy and delicious soup, this palateble potage has a wonderfully fresh flavor and is a great way to get your daily servings of nutritious vegetables.
Ingredients
For 4 people
- 2 cup(s) chopped broccoli fresh or frozen
- 1/2 cup(s) onions, chopped
- 1 3/4 cup(s) reduced-sodium chicken broth
- 2 tablespoon(s) cornstarch
- 354 3/4 tablespoon(s) fat-free evaporated milk
Directions
In a saucepan, combine broccoli, onion and broth; simmer for 10-15 minutes or until vegetables are tender. Puree half of the mixture in a blender; return to the saucepan. In a small bowl, whisk cornstarch and 3 tbsp. of milk until smooth. Gradually add remaining milk. Stir into the broccoli mixture. Bring to a boil; boil and stir for 2 minutes.
