Mediterranean Spinach Pie
This Greek spinach pie is called Spanakopita and is perfect as a side dish or as an appetizer. Although it may take some extra effort to prepare, it's well worth enjoying this traditional Greek dish.
Ingredients
For 6 people
- 1 package (10 ounces) spinach, frozen, chopped, thawed and squeezed dry
- 1/2 cup(s) green onions, minced
- 1/2 cup(s) parsley, fresh, chopped
- 1/2 cup(s) fresh dill, minced
- 1/2 cup(s) crumbled feta cheese
- 4 ounce(s) cream cheese, softened
- 4 ounce(s) cottage cheese
- 2 tablespoon(s) parmesan, grated
- 2 large eggs
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 40 sheets phyllo dough, thawed
- 1/2 cup(s) butter, melted
Directions
In a blender combine spinach with scallions, parsley, dill, cheeses, eggs, salt and pepper and process until smooth. Prepare small fillo triangles according to directions for triangles. Fill each triangle with 1 tsp. of spinach mixture. Brush outside of triangles with butter; place seam side down on ungreased cookie sheet. Bake in preheated 350-degree oven for 20-25 minutes or until golden brown and puffed. Serve hot.
