Cheesy Mashed Potatoes
The only thing better than mashed potatoes is mashed potatoes flavored with cheese. Use blue cheese to give these potatoes a sharp flavor that your taste buds won't soon forget.

2 lb. red potatoes, cut into 2-inch chunks
2 garlic cloves, peeled
1 cup crumbled blue cheese
1/2 cup 1% low-fat milk
2 tbsp. chopped fresh parsley
1/4 tsp. freshly ground black pepper
Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil; cook 15 minutes or until tender. Drain. Place potato mixture and remaining ingredients in a large bowl and mash to desired consistency.
