Everybody should have some good gnocchi. This potato pasta is mixed with spinach for an extra boost of nutrients. And we didn't even get to the cheese, mushrooms, tomatoes and garlic. Need we say more?

Ingredients
17 oz. gnocchi
1/3 cup of olive oil
3-6 garlic cloves, minced
10 oz. frozen spinach, thawed and squeezed dry
1 (14 oz.) can diced tomatoes
1 tsp. Italian seasoning
Salt and pepper
1/2 cup Parmesan cheese, grated
1/2 cup of mozzarella cheese, shredded
1/2-1 cup mushrooms, sliced

Methods/steps
Preheat oven to 350 degrees and grease large casserole dish. Cook gnocchi according to directions and drain. Heat oil in large skillet, add garlic, and cook 30 sec. and then add tomatoes and seasoning. Cook and stir for 5 minutes. Add gnocchi to spinach mixture in skillet, and stir gently. Transfer gnocchi mixture to prepared casserole dish. Sprinkle with cheeses. Bake 20-30 minutes or until bubbly and cheese is melted.
