Healthy Potato Soup
Soup is good food, especially this potato soup. It's got gourmet taste without all of the fancy and fattening ingredients. Make a batch in minutes.

3/4 cup chopped onion (1 medium)
4-1/2 cups potatoes, peeled & diced
1 Tbsp. margarine
3 Tbsp. flour
1 quart low-fat milk
Place onions and potatoes in sauce pan. Cover with water and bring to boil. Simmer until soft, about 10 minutes. Drain. Melt margarine in saucepan. Add flour and stir until smooth. Heat to thicken. Add onions and potatoes to milk mixture, and heat to serving temperature. Salt & pepper to taste.
