Heart Healthy Lentil & Lemon

Ingredients

For 8 people

  • 2 cup(s) lentils, rinsed and drained
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoon(s) olive oil
  • 64 floz water or no-salt-added vegetable broth
  • 1 medium potato, diced
  • 1/2 teaspoon(s) oregano
  • 2 tablespoon(s) fresh lemon juice
  • 1 dash(es) freshly ground black pepper to taste

Directions

Place onion, garlic and oil in medium soup pot over medium heat; sauté until soft. Add all ingredients except lemon juice and pepper. Simmer 45 to 60 minutes or until the lentils are soft. Stir in lemon juice and pepper and serve immediately.
