Presto Spinach Salad
Lettuce introduce you to a salad that's sure to change the way you look at roughage. Set those same old iceberg salads aside and give this scrumptious spinach salad a spin. You won't think twice about eating green.
At a glance
1/3 cup olive oil
3 tbsp. sugar
2 tbsp. white wine vinegar
2 tbsp. sour cream
1/2 tsp. dry mustard
1 (6 oz.) pkg. spinach, washed and dried
1/2 cup chopped walnuts, toasted
1/2 cup dried cranberries
1/3 cup goat cheese, crumbled, optional
In a shaker jar combine the oil, sugar, vinegar, sour cream and mustard. Shake well. Divide spinach among four salad plates. Drizzle with dressing. Sprinkle with the walnuts, cranberries and goat cheese, if desired.
