Yo ho ho and a bottle of rum! The title says it all -- except that this beefy dish is quite delicious! The rum lends some great flavors to this dish.

Ingredients
  • 1 tbsp. salad oil
  • 2 medium onions, chopped
  • 2 cloves minced garlic
  • 3 lb. coarsely ground chuck
  • 2 tbsp. chili powder
  • 1/2 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 cup dark rum
  • 1 (6 oz.) can tomato paste
  • 1 (28 oz.) can tomatoes
  • 3 (16 oz.) cans drained kidney beans

  • Methods/steps
    1. Heat oil in an 8-quart pot. Lightly saut onion and garlic. Add meat, breaking up and stirring with wooden spoon until color changes. Add remaining ingredients. Cover and simmer 2 hours, stirring now and then. Check for seasoning.
