She Crab Soup
Creamy, dreamy crab soup is on the menu with this filling soup. With a sherry-based sauce, this is an absolute melt-in-your-mouth offering.
Ingredients

- 2 large onion, fine dice
- 16 tablespoon(s) clarified butter
- 2 cup(s) all purpose flour
- 10 cup(s) half-and-half
- 64 tablespoon(s) heavy cream (1 quart)
- 1 1/2 teaspoon(s) mace
- 8 floz high-quality sherry, plus a little extra for garnish
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) pepper, to taste
- 16 ounce(s) fresh Atlantic blue crab meat
Directions
In a large stockpot cook onions in butter until soft. Add flour; reduce heat to low, stirring constantly for 15 minutes. Add milk products; continue stirring. Add remaining ingredients and simmer 30 minutes, stirring frequently. You must use high-quality crab meat to obtain the desired soup. Serve topped with a splash of sherry.
