Ingredients
2 large onions, fine dice
1 cup clarified butter
2 cups all-purpose flour
2.5 quarts half-and-half
1 quart heavy cream
1 1/2 tsp. mace
1 cup high-quality sherry, plus a little extra for garnish
Salt and pepper, to taste
1 lb. fresh Atlantic blue crab meat

Methods/steps
In a large stockpot cook onions in butter until soft. Add flour; reduce heat to low, stirring constantly for 15 minutes. Add milk products; continue stirring. Add remaining ingredients and simmer 30 minutes, stirring frequently. You must use high-quality crab meat to obtain the desired soup. Serve topped with a splash of sherry.
