Although a white fish entree can stand on its own, this scrumptious shrimp cilantro makes a great complimentary dish.
2 tbsp. butter
2 tbsp. olive oil
1 medium red onion, chopped (about 1/2 cup)
2 cloves garlic, fine chop
10 medium raw shrimp, peeled and deveined
2 tbsp. snipped cilantro
Baked white fish
Heat butter and olive oil in sauté pan; add onion and garlic. Cook and stir until tender. Add shrimp; cook 1 minute. Turn shrimp and cook until pink, about 2 minutes longer. Do not overcook. Remove shrimp to serving dish and sprinkle with cilantro. Pour pan juices over shrimp. Serve with lime slices and baked white fish, such as tilapia.
