Tomato Mushroom Risotto
Plain rice is the poor man's risotto. Bring this rich dish to the table. Portabella mushrooms and Roma tomatoes add plenty of flair to this scrumptious side that's bursting with flavor. Prepare to give up seconds of this people pleaser.

2 oz. portabella mushroom 2 oz. shiitake mushrooms 3 oz. diced Roma tomatoes 1/2 oz. minced garlic 1/2 oz. minced shallot 1 tbsp. fresh chopped basil 1 pinch saffron 4 oz. cooked risotto 1 oz. butter Salt and pepper, to taste
Sauté all ingredients, except butter, and reduce liquid by half. Finish with butter, and correct seasoning with salt and pepper.
