The Versatile Tortilla

Start with the tortillas, sold in most grocery stores and ready to eat. They're much better when heated in the microwave for a few seconds to soften them up. If they seem dry, place them on a plate and cover with a damp paper towel before microwaving. You can get standard flour tortillas, or try corn tortillas for a bit more flavor. There are also low-carb and whole wheat versions available in some markets.
